The Botrytis fungus attacks the grape
berries, encouraged by humidity. If the grapes are ripe and healthy, and the ambient
conditions are alternately damp (not rainy) and sunny as on Autumn
mornings, this 'Noble Rot' shrivels the grapes and concentrates the
natural sugar enabling top quality sweeter wines to be produced. |
